For some odd reason on the video games, it was always a more green color, whereas the shows, it was a blue-green.

If I remember right, Bulbasaur was blue with the green plant. *Looks at poster with the 150 first* Yep, definitively blue there.

Did they really change Bulbasaur from blue to green?

No, they didn't change it. He was kind of more of a greenish-blue. His shiny form is green, but this Bulbasaur is based off of the one I use on tumblr.
